Difficulty: Easy Very good bread pudding recipe. Lower fat than a lot of bread pudding due to the lack of suet in the ingrediants.

Ingredients:
225 Gram(s) Can be brown or white White Bread
275 Millilitre(s) Milk
50 Gram(s) melted Butter
75 Gram(s) Soft Brown Sugar
2 Teaspoon(s) level Mixed Spice
1 beaten Egg
175 Gram(s) Mixed Fruit
1/2 grated zest of Orange (fresh)
1 grated Nutmeg
Directions:
Recipe requires a 2 - 2 1/2 pint or 1 1/4 - 1 1/5 litre baking dish, buttered.

Pre-heat oven to 180c, 350f or gas mark 4.

Begin by breaking the bread into suitable sized pieces and place them in a bowl.

Pour over the milk then give the mixture a good stir and leave it for about 30 minutes so that the bread become well soaked with the milk.

Now add the melted butter, the sugar, mixed spice and beaten egg. Using a fork, beat the mixture well, making sure that no lumps remain, then stir in the mixed fruit and orange rind.

Next spread the mixture in the prepared baking dish and sprinkle over some freshly grated nutmeg. Bake in a pre-heated oven for about 1 1/4 hours.
